Rose Cardamom Chia Seed Pudding

I’m obsessed with chia seed pudding. I love that it’s a great source of fiber and nutrition, and doesn’t make me feel overstuffed.

Growing up, I was obsessed with the rose scent and flavor of everything! And when I went to India as a child I always loved getting rose flavored soap, beauty products, and even ice cream!

This chia seed pudding has the subtle flavor of rose. Part of me wishes it was pink- but I didn’t want to add any artificial food coloring to the recipe. If you like rose or just want to try something new, this pudding has just the right amount of sweetness, and the honey compliments the rose scent and flavor very well. However, if you want to make this vegan you could sub a vegan sweetener for the honey. I would suggest something more neutral tasting like agave over maple syrup as to not overpower the rose flavor. This tastes great with a steaming cup of masala chai!

I like the combination of about 1 can to two cups of full fat coconut milk with 4 tablespoons of chia seeds. It creates just the right pudding consistency without being too thick.
